College Cooking: Meal in a Muffin

cookiesMaking  meal in a muffin is a great simple breakfast for when you are on the go and don’t have time to make something every morning. Extra muffins can be kept frozen or refrigerated for a couple of days.

 

 

 

Ingredients:

4 eggs

1 cup of milk (any type)

Crescent rolls (Gluten free option is corn tortillas)

Add any ingredient you want! In the video we had:

Diced tomatoes

Onions

1 cup cheddar cheese

Red peppers

 

How To:

1.) Pre-heat the oven to 375 degrees.

2.) Mix your eggs, milk and ingredients into a medium sized bowl.

3.) Grease a muffin pan either with oil or a cooking spray.

4.) Take the crescent rolls (or corn tortillas) and put one in each muffin spot, making sure to try to spread the rolls all the way up to the top of the muffin pan.

5.) Put a large spoonful of mix into each muffin spot in the pan.

6.) Bake for about 15 minutes, or until the top of the muffins are golden brown.

7.) Let cool and enjoy!
