Cooking With Cook: Chicken Stir-Fry

October is here and that means comfort food. With the cold weather rapidly approaching, why not wrap-up with some quick, warm chicken stir-fry? This recipe is easy to make, using only eight ingredients and with a total cook time of 15 minutes. The ingredients cost $18 and make between two and four servings.

Ingredients:

1 egg

1 tablespoon butter

1 tablespoon vegetable oil

½ onion, chopped finely

1 packet garden vegetable rice (cooked)

2 tablespoons soy sauce

1-2 chopped, cooked chicken breasts

First, set the stove on high and place a skillet with the butter on top of the stove. While the butter is melting, break and beat the egg. Pour it onto the skillet and let it sit about one minute, or until cooked through. Remove the egg and cut it into small pieces. Set aside.

In the same skillet, add the olive oil. Add the onion and chopped chicken and let it cook. When the chicken is golden brown and no longer pink, add the garden vegetable rice and soy sauce. Let it simmer until warm. Add in the egg and pepper and continue to stir.

After about two or three minutes of cooking, pour the stir-fry into a bowl and serve warm.
