College Cooking: Protein pancake pick-me-up 

With spring semester in full swing, the days are getting longer and us students need something to keep our energy up all day.  For this week’s college cooking, we’ve prepared a recipe for protein-packed pancakes that are easy enough to make before your 8 a.m. classes.


Here is the recipe:

  • 2 bananas
  • 2 tbs vanilla protein shake
  • 1 cup flour
  • 1 cup egg whites
  • 4 tsp cinnamon
  • Handful of blueberries or other mix-ins

 

Mash together bananas and of vanilla protein shake.

Then, add flour, egg whites, and cinnamon.

Fold in blueberries or other desired mix ins.

Cook on a skillet at medium-low heat.

It’s best served with Greek yogurt and honey for some extra pizazz. The batter can be frozen and saved for a quick snack later in the week. Enjoy!
